I've found a 400 thread count Egyptian Cotton sheet to be much softer than a 600 thread count cotton sheet set. So pay attention to the fabric as much as the thread count.

Most bedding sets include the measurements of both the fitted and flat sheets somewhere on the package. Measure the depth of the mattress to ensure your fitted sheets have enough fabric to tuck comfortably around the corners of the mattress. Deep pocket bedding varies as far as depth so read the package carefully. Most deep pocket fitted sheets run from 15 to 22 inches in depth. That's quite a range, so make sure you measure your mattress carefully.
